It’s Friday, put your feet up and relax. Dinner cooks itself tonight (almost)! I went for chicken tonight 🙂
Chicken thighs (or chicken breast if you don’t like fat), butter for frying, mushrooms, capsicums (I found some cute, little ones), spring onions (heaps) and oyster sauce. Can be served on it’s own, with rice, in a flat bread with some cheese and sour cream or as I had it; in iceberg lettuce leaves with guacamole.

Chop the chicken and put it in the frying pan with butter. Add a little salt and pepper. While it’s cooking chop up the mushrooms, capsicum and spring onion. When the chicken is almost cooked, throw the oyster sauce (not much, just a tablespoon or two) and the capsicum and mushrooms. While this cooks and you choose to have guacamole on the side, either chop everything fine and mix it into the avocado. Alternatively, throw everything into a blender and whizz (this doesn’t look as pretty as chopping, but it’s faster!). Now put the spring onions in the chicken mix, stir, turn the heat down, wash the lettuce leaves or prepare your flatbread, taste the chicken mix and adjust, do the same with guacamole. Put it all together and enjoy 🙂
