Since I decided earlier today that it’s completely fine to eat fungus, I want to share this delicious recipe with you. It’s another one of those brilliant two ingredient recipes. It’s so easy it should be illegal, but still super tasty. And if you don’t believe in the Fat Will Kill You craze, it’s also healthy! Great as a starter, part of a tapas table or as a side dish instead of carb loaded things such as pasta or bread. Great for a BBQ or under the grill. You can’t go wrong (and if you don’t like blue cheese, try it with Brie instead). All you need is
mushrooms and blue cheese (I used Danish Blue Castello, only because I like anything Scandinavian).
Put the grill on. Take the steams out of the mushrooms and put some cheese where the steam used to be. You can put heaps or just a little, depending on how big your love for cheese is. Then you put them on a baking tray and put it all under the grill for about 10-15 minutes, watch out in case your oven is better than mine. Then you enjoy! Maybe with a steak? Mmmmm…. Delicious! If it makes you feel good, it can’t be that bad for you, right?
