For the sake of using as much as possible from my pantry before me move house, I was looking for a reason to cook chickpeas this morning. I was thinking hummus, but then I would’ve needed to cook something else on the side. So I ended up with fritters. Super easy and super tasty, just they way I like my cooking. I found the recipe at Donna Hay and actually used most of what she did. You need
1 Can Chickpeas, 1 Zucchini, 1 Onion, Zest from one lemon, 2 Eggs, 2 tbsp Milk/Cream, Salt and Pepper, 50g Flour (now, you can use whatever you want, wholemeal wheat/almond meal/soy meal, the one that fits best in with your diet), Butter for frying and a little love for cooking. If you have some herbs you want to put in, I am sure for instance coriander would be great.
I used my little food processer to quickly whizz the chickpeas to chunks and a good old grater to grate the zucchini. Then I chopped the onion with a knife, but you can use the food processor for this too. Zest the lemon and mix the eggs, milk, flour, salt, pepper and the vegies together. Then you put some a lot of butter in the frying pan and put some of the mix in to form patties. Cook until golden brown on each side and serve with a lemon wedge to squeeze over.
At this point I figured I needed to dice my onions and not just slice them, so I used my super awesome kitchen scissors and chopped away to make the onion bits a little shorter. It worked – what a great idea!
Yum! Perfect for a weekend breakfast or lunch. You can probably serve a small salad on the side for extra creds for the chef (and extra nutrition). How good does it look? And it tasted super awesome too! I can imagine a dollop of sour cream would be good with this. Or, what about using it as a side for a BBQ? Hmm…. Must try (taking notes).
Time to get away from the desk I think. Need to pick up my better/other half from work so we can go to the gym! Gotta try to decide wether I am lifting heavy or doing intervals. I am leaning toward heavy! Ooooh, and I did Day 25 of the 30 Yoga Challenge this morning. That means I only have 5 days to go! Wohoooo! Need to think of a challenge to do in July.. Or maybe moving house and packing for an 8 week holiday is enough challenge? Food for thought…
