Ok, I finally found something I could make using both the chickpeas and (some of) the quinoa I have sitting in my slowly emptying pantry. Vegetarian burger patties. YUM! May I say they are super delicious (I mean, all chefs on TV brag about their own food all the time, so I’ll take a chance)?! I also have two witnesses that the burgers are super tasty, as I was serving up a storm yesterday. But if you don’t believe me, just make them and try for yourself.
These patties take longer to make than any of the recipes I usually make, but on the up side, the recipe is big, so you will have veggie burgers for lunch the next few days. I served them with avocado mash and in lettuce leaves, but I am sure they can be eaten in normal burger buns as well. So, what you need is;
1 sweet potato, 1 cup quinoa, 1 can chickpeas, 1 onion, 1 capsicum, 2 carrots (or one really big one), some spinach (not necessary, but if you like greens, add it), handful pumpkin seeds, lemon juice, grond cumin, tahini, olive oil, salt & pepper.
Put the quinoa to boil, it should say on the pack how to do it, but probably about double the amount of water to quinoa. Chop the sweet potato, the smaller bits the better because they will cook faster. I keep the skin on, saves time. Put a bit of oil, salt and pepper on it and under the grill in the oven for as long as it takes for it to be cooked.
While that is cooking itself, chop the onion, carrot and capsicum into small pieces and throw it in a hot pan with butter or oil. You can add a little salt and pepper too. This should just be sauteed, not completely fried. Cook for a few minutes then put the veggies in a food processor. If you’re using spinach, add this to the food processor too. Transfer to a big bowl. Now add the chickpeas, tahini, seeds, cumin, salt and pepper to the food processor and mash it all up. Transfer to the big bowl.
Your potatoes should be cooked by now, take them out and mash them up with a fork or in the food processor and then put it in the big bowl. Check with your quinoa if it’s cooked and then add that to (yep, you guessed it) the big bowl too. Now mix it all together. Taste it. Add some seasoning if needed. Yum, right? Use your pretty hands to form patties.
These patties are basically cooked and ready to eat, but if you want a golden brown outside, melt some butter in a frying pan and let the veggie patties just enjoy the ride. What you want to eat this delicious burgers with or on is completely up to you. As I said, I ate them with a lettuce leaf and avocado mash (with lime, chilli, salt and pepper) and my better half requested melted cheese on top. Tasted quite scrumptious (I’m learning new words every time I watch MasterChef) if I may say so. What’s your serving ideas?
