I am about to rush out the door for lunch with good food and better friends, can’t wait. MasterChef Kasia never just cooks, everything on the table is a masterpiece. My stomach is very lucky to have her as my friend (and so am I, don’t get me wrong)!
Now I can reveal the little goodies I am bringing, part of it looks like a kids party, the other half definitely for adults, yet so childish (just like me at times, nothing wrong with that, right?!), but seriously, how much fun are these ReinBeers??
Can’t wait to show these guys off. Love them! And, to be honest, I can’t wait to eat these little Santas (if there’s any space left in my tummy at that time of the meal) either.
They are super easy to make too (if not, I probably wouldn’t make them at 9PM) and on top of that, there’s minimal sugar in them, just whatever is naturally in the strawberry and in the dark chocolate and you can get the latter sugar free, so it’s basically nothing. Lots of fat though, therefore very tasty! All you need is
Strawberries, 80gram dark chocolate, 130gram mascarpone, a teeny tiny instant coffee with a teeny tiny hot water, a few drops vanilla extract and whipping cream (or coconut cream if you prefer). I found the chocolate truffle recipe here (Swedish page).
Melt the chocolate in a bowl over hot water (make sure no water mixes with the chocolate). Once melted, mix in the mascarpone in before you mix the teeny, tiny coffee with water and vanilla and stir that in too. That’s it. Now make little dollops on a baking paper or in mini muffin forms and put a strawberry firmly on top (I hope you understood that you need to remove the green stuff and clean them first?). Put them in the fridge until you want to serve them.
Five minutes before you’re putting them on the table, whip some cream and put in a ziplock bag (that’s all I had, feel free to use something a little more fancy). With a sharp knife, cut the top third off the strawberry, put whipped cream on the bottom half and put the top back on, before putting a little cream top on the Santa hat. If you really want to go all out, melt some dark chocolate and use a toothpick (I did say all out, didn’t I?) and make little eyes on the Santa on the cream in the middle of the berry.
Some say hand whipped cream tastes better, and it’s also a mini workout for your arm, shoulder and core, so get whipping!
Y.U.M. If you just feel like something yummy without being fancy, just make the chocolate truffle mix and eat as is (might be a little rich). Or just eat as is alternating with strawberries. Or banana? Maybe pear? Really up to you! And if you want to make the Santas without the chocolate (seriously?) that’s easy done too! Or, simply dip your strawberry in whipped cream (double dipping is ok, no one is watching).
