Muggin ~ It’s A Muffin In A Mug

Be warned, this is very delicious. It may be hard to only have it as a treat. Although it is sugar free, it still contains a lot of energy, so you may end up skipping dinner if this is your afternoon treat. There, at least I warned you.

I found this recipe in Sarah Wilson’s book “I Quit Sugar For Life” and have been mixing it up a little by using different types of milk, throwing some walnuts or macadamias in or using coconut yoghurt instead of greek yoghurt. Absolutely delish. Try your favourites. I am sure fresh strawberries and whipped cream on the side would be totally amazing too! All you need is;

1/4 cup Almond Meal, 2 tbsp Desiccated Coconut, 1 tbsp raw Cacao Powder, 1/2 tbsp Rice Malt Syrup, 1/4 cup Coconut Milk (or any other type of milk) + Greek Yoghurt to serve.

All you do is throw everything except the yoghurt in a mug, mix and put it in the microwave for 1.5-2 minutes. Then throw some yoghurt (or berries, whipped cream or whatever else you like) on top and enjoy! Again, be warned, too delish! 🙂
