Recipe ~ Coconutty Crunchy Granola

I was trying to get rid of some nuts and seeds from the pantry on Saturday and the end result was way more tasty than I thought it would be. So I figured I should share the yumminess with you. All you need is

2 cups Mixed Nuts (I was getting rid of leftovers, you can mix and match), 2 cups Walnuts (or your faves), 1 cup seeds (I used sunflower seeds), 1 cup Dried Coconut, 1 cup Dried Berries (I used some blueberries and cranberries. You can skip this if you want to keep the fructose low), 1 Egg White, 2 tbsp Water, a little Cinnamon, 1 tsp Vanilla Extract, a pinch of Salt, 3 tbs Coconut oil, 1/3 cup Honey or Rice Malt Sirup (depending on how much fructose you want).

As per usual, this is super easy. Put the nuts in a blender/food processor in smaller batches and whizz quickly just to break them up a little, not to turn them into powder. Do the same with the seeds. Put them all on a big bowl. Now mix everything else in another bowl. Pour the liquid into the nuts and stir until well combined.

Put some baking paper on a tray and pour the mixture on top, spreading it in an even layer. Put it in the oven on approx 150 degrees C. Leave it for 20 minutes before stirring again. In these 20 minutes I suggest you do the following: 10 Squat Jumps, 5 Push Ups, 20 Crunches, 50 Jumping Jack, 20 Walking Lunges. You would have time do do this twice.

Stir the granola and leave it for another 10 minutes. You now have 10 minutes to do 10×50 sec intervals with 10 sec rest. Choose between the following: Running on the spot, Jumping Jacks, Mountain Climbers, Burpees and Squat Jumps. Go!

After these intervals, stir one final time and leave the granola in the oven for another 10 minutes. Relax and stretch (we all need to stretch more!). Take granola out and don’t touch it for the next 10 minutes. You probably have time for a quick shower, unless you are on of those people who spend waaaaay to long in the shower.

Use a spatula to break up the granola into little bits and pieces, let it cool down and put it in your favourite cookie jar (cos you don’t have cookies in it, right?). When you get hungry, enjoy with some greek yoghurt and fresh fruit or berries (look here how pretty it looks). Very filling and super tasty! Enjoy!

PS: If you are totally confused, the granola should be in the oven for a total of 40 minutes. You stir after 20 and 30 minutes and then you leave it for 10 minutes after taking it out of the oven.
